What is Creamed Honey?

Creamed Honey is honey that has been crystallized in a controlled manner, so that it remains soft and spreadable. It generally has a sweeter taste, and a lighter color.

Every bit of creamed honey from Elden Foods is 100% Pure Raw Honey. 

Honey that has begun to crystallize normally, in large jagged crystal shapes, has a gritty texture.  Crystallized honey is not going bad, but in fact is going through a normal process that helps nature preserve one of it's most amazing products. At Elden Foods, we've developed a way to control the crystallization of honey, making it feel smooth, and taste amazing!

How Creamed Honey is Made

First, regularly crystallized honey is crushed until all crystals are microscopic. This becomes the seed for a larger batch of creamed honey. Then, this seed is mixed with liquid raw honey, at a 1:10 ratio, and kept between 55-70 degrees Fahrenheit, all while being kept moving. After just under a week, a batch of very smooth, very white (because glucose is what crystallizes, and glucose crystals are naturally white) creamed honey is ready for bottling!

This process gives our honey a creamy smooth texture and a delicious robust taste. People use it as spreads for toast or bagels, as it is thicker, and does not run off the knife like liquid honey. Its also used for baking! Its enhanced flavor gives products baked with it a unique sweetness that tastes great, and is nearly impossible to duplicate with other sweeteners.

Because creamed honey does not revert back to being gritty, it is perfect for storage! If kept at approximately 65 degrees Fahrenheit it will store in its rich creamy state indefinitely.

This sounds great because I don't use butter on my muffins or toast; I use honey and cinnamon so this would be perfect; I will have to try it. I am the only person who eats honey in my household as there are only my husband and I and he doesn't eat honey, he uses sugar. My daughter who does a lot of baking would no doubt love it, so that will no doubt will be my next purchase; your farm looks so peaceful and restful. I grew up on a farm and we had local bee keepers from whom we got our honey so I have been looking for good honey for years and it seems that I have found it. Thank you

Creamed honey sounds delicious since you said that it has a sweeter taste and a lighter color. I never knew that it was made from crystallized honey which actually goes through a normal process of preservation. Personally, I like kinds of honey with a robust taste so I might buy a local product online to see what it tastes like.

Great Question. This can be done in small quantities with a pestle and mortar. Or in large quantities with a gear grinder.

I have my family addicted to your creamed honey now. I use this for my tea every morning. I don’t need as much as regular honey. I tried to keep it for myself and got the generic store honey for my husband and daughter to use. Well, they started using your delicious honey and now this is my third tub!
