This listing is for some pretty special honey.
This honey is harvested from the Yucatan Peninsula, where there are miles and miles cordoned off, just for beekeeping, where no sprays and chemicals are allowed.
What makes this honey so special?
The taste first off: sweet, delicate, with an amazing aroma, without being overpowering. It is truly one of the most delicious honeys around.
But very importantly:
When sent through the Elden Foods testing process, it came back with NON-DETECT for EVERY SINGLE chemical we test for. This is extremely rare, even for organic honey. Our tests are so sensitive, we can detect as low as 2 parts per BILLION! (Think one small crystal of salt in an Olympic size swimming pool.) All of our honey has to pass rigorous tests, but no honey has ever passed with such perfect scores across the board.
A hypothetical: To give you an idea of how rare this is, imagine this scenario: If there is a beehive sitting in the middle of nowhere, where no spray or chemical has been used for decades, but a neighbor several miles away, not even in sight, sprays their lawn with weedkiller, some of that will get picked up by air currents, and tiny amounts of it will land on a flower, get picked up by a bee, brought to the hive, and when harvested, it will show up in our tests. For this batch, our tests showed absolutely nothing.
Not only that, but it also came back with the perfect sugar profile, telling us that the beekeepers did not feed any detectable sugar before the harvest. Unfortunately sugar feeding to make the harvest bigger is extremely common in the honey industry. (All of our honey must pass this test to be sold.)
